Pine nuts
The nuts from the Aleppo pine, found in the Middle East and round the Mediterranean, are known in Tunisia as zgougou. The pine nuts are cleaned, ground in water, sieved, then mixed with wheat flour and/or starch. Sometimes concentrated milk is added. The mixture is cooked at low heat while stirred, with powdered sugar added gradually. The cooked dessert is covered in a white cream made from milk, starch, sugar, eggs and orange blossom essence, then decorated with almonds and other seeds and nuts, whole or ground, and small candy.
