can we establish more than 1 default bearers? If so, during establishment of each default bearer we get an ip address allocated. den which ip address is used during the communication?

At a max of 3 default bearers can be established per PDN connection.
I read that, there can be 11 bearers(3 default per PDN and 8 dedicated). The 8 dedicated bearers are per UE or per PDN? Is my understanding correct, can someone please confirm?
